Design

The plums on this particular tree at the top of Hall Road never get sweet and they ripen very late in the season. But they have a sharpness that I thought would be good in a beer, giving it the sort of tartness that you usually find in a Belgian lambic. The wild yeasts have contributed to the fermentation, so it is as dry as a bone and the acids in the fruit have permeated the beer giving it the power to make your mouth water in the after-taste. Try this. It is a sipping beer to be drunk in a small glass. It is based on Ten Thousand Geese, the robust smoked porter but the plums were added in a couple of demijohns for about 3 months.

This beer is produced without the use of any finings, filtering or pasteurisation, so all the flavours of the ingredients are preserved for your enjoyment.
