A beer to explore the character of rye malt. A similar hop bill to East Coast IPA with plenty of IBUs (estimated 76 IBU) and enough balancing malt character. The malt was emphasised with a mash at 67C for medium body and this is also increased by the flavour of the rye.
The naming is fortuitous, in that I had the good fortune to collect some remains of fossil rhino from the West Runton Freshwater Bed on the coast near Cromer. These had been discovered by Jonathan Stewart the day before (14 January) but he was unable to gather them as it was late in the day and he was jetting off on holiday in the early hours. The full story can be found on my Northfolk website. The press got hold of the story on the website and it became front page news in the Eastern Daily Press. From there it went on tv (Anglia TV and Mustard TV) and even a clip appeared in the USA (seen via Youtube). So, to celebrate this exposure, beer was named for both the fossil and the ingredient.

Tasting notes
A very full flavour with punchy resinous hops balanced by the malty and spicy Maris Otter and rye malts. Very satisfying at 7%. Darker than East Coast IPA and more body and maltiness. I find this a very pleasing brew and I am keen to use rye in other beers (e.g. a saison) and to brew this IPA again one day. It would be good with Simcoe hops if I can get any (all contract sold nowadays and none on the spot market).

Pouring a deep red amber with a big frothy head and named in honour of the fossilised Rhinoceros that was found on a local beach, the aroma of this Rye Beer is salted toffee and yeasty bread dough. This is a beer with a big malt bill, a malt bill that’s round and chewy and full of good things. You find a thick treacle tart base, honey and wafers, and lots of meaty, almost bloody, rye goodness. You know that earthy pumpernickel thing that makes rye beer one of my very favourite things in the world? Yes, that. And across this the hops are sharp and zesty, packed with lime leaves, mandarin zest, mango and pithy woodland greenery that lead you to a super long dry bitter finish that's warmed through by a hefty alcohol hit.

This beer is produced without the use of any finings, filtering or pasteurisation, so all the flavours of the ingredients are preserved for your enjoyment. Also, it is gluten-free (<20ppm) for the benefit of those who suffer from gluten intolerance or who wish to reduce their gluten intake.
