Notes
A beer that was inspired by a conversation with James Rylance, head brewer at Redchurch Brewery in the East End of London. A gentle wild pale ale featuring lactic acid from a short kettle souring and yeast cultured up from a bottle of Redchuirch Urban Farmhouse. The result is a unique combination of flavours, not quite the flavour of a saison and only a little bit wild (acidic), with gentle hops and a good moussy head. All the output was bottled, no cask.
A quarter of the brew for Strange Attractor was fermented on 2.5kg of Jerusalem artichokes from my garden that had been over roasted for one and a half hours. The name of this beer was prompted by the terrorist attrocities in Brussels in early 2016 and the words used by Secretary of State John Kerry when he went to Brussels to speak in the aftermath. His words of course echoed the solidarity of John F Kennedy when he said to the people of Berlin, 'Ich bin ein Berliner'.
